Instructions
- Combine rolled oats and warm milk in a bowl; let sit for 10 minutes.
- Dissolve yeast in warm water with honey; wait until bubbly (5-10 minutes).
- Mix softened oats, melted butter, and more honey into the yeast mixture.
- Gradually add flour, cinnamon, and salt until a shaggy dough forms.
- Knead on a floured surface for about 8-10 minutes until smooth.
- Place dough in an oiled bowl, cover, and let rise in a warm spot until doubled (1 to 1.5 hours).
- Punch down the dough, shape it into a log, and place in a greased loaf pan; let rise again (30-40 minutes).
- Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown.
