- 2 cups shelled roasted unsalted pistachios
- 1–2 teaspoons honey or maple syrup (optional)
- 1/2 teaspoon vanilla extract (optional)
- Pinch of sea salt (optional)
Instructions
- Preheat the oven to 350°F (175°C). Spread the shelled pistachios on a baking sheet and roast for 8-10 minutes until fragrant. Cool slightly.
- Add the cooled roasted pistachios to a food processor or high-speed blender. Blend for 1-2 minutes until they start breaking down.
- Continue blending for an additional 5-7 minutes until you achieve a smooth and creamy texture, scraping down the sides as needed.
- If desired, add honey, vanilla extract, or sea salt and blend again until fully incorporated.
- Transfer the pistachio butter into a clean airtight jar and store in the refrigerator.
