  • 8 oz walnuts
  • 15 small jarred cherries
  • 1 1/4 lbs mixed crystallized fruits
  • 12 oz pitted dates, chopped
  • 3 oz raisins
  • 2 oz sliced pineapple, diced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup granulated sugar
  • 1/2 cup butter
  • 2 eggs
  • 1/4 cup dark corn syrup
  • 1/8 cup juice from canned pineapple and jarred cherries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your bundt pan.
  2. In a bowl, whisk together flour, baking powder, allspice, cloves, cinnamon, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time.
  4. Mix in dark corn syrup and fruit juices until well combined.
  5. Gradually add dry ingredients to wet mixture, stirring gently.
  6. Fold in chopped dates, raisins, crystallized fruits, pineapple, nuts, and cherries.
  7. Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.
