Ingredients
- 8 oz pecans
- 8 oz walnuts
- 15 small jarred cherries
- 1 1/4 lbs mixed crystallized fruits
- 12 oz pitted dates, chopped
- 3 oz raisins
- 2 oz sliced pineapple, diced
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon ground allspice
- 3/4 teaspoon ground cloves
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2/3 cup granulated sugar
- 1/2 cup butter
- 2 eggs
- 1/4 cup dark corn syrup
- 1/8 cup juice from canned pineapple and jarred cherries
Instructions
- Preheat your oven to 350°F (175°C) and grease your bundt pan.
- In a bowl, whisk together flour, baking powder, allspice, cloves, cinnamon, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time.
- Mix in dark corn syrup and fruit juices until well combined.
- Gradually add dry ingredients to wet mixture, stirring gently.
- Fold in chopped dates, raisins, crystallized fruits, pineapple, nuts, and cherries.
- Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.
