- 4 ripe bananas (about 1 1/3 cups mashed)
- 1 large egg
- 1 tablespoon vanilla extract
- 3 tablespoons light brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1½ cups all-purpose flour (or white-whole wheat)
- 2 tablespoons unsalted butter (or applesauce)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mash the bananas until smooth. Stir in the egg, vanilla extract, light brown sugar, granulated sugar, and cinnamon until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually combine the dry ingredients with the banana mixture until just mixed.
- Fold in melted butter or applesauce until evenly distributed.
- Pour the batter into the prepared loaf pan and bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for about 5–10 minutes before transferring to a wire rack.
