  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper, to taste
  • 1 cup cooked rice (brown or white)
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets

Instructions

  1. Preheat your oven to 400°F (200°C). Toss broccoli and cauliflower in olive oil, salt, pepper, and garlic powder, then roast on a baking sheet for 20-25 minutes.
  2. Season sliced chicken breast with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear for about 5-6 minutes per side until fully cooked.
  3. In a skillet over medium heat, sauté corn and green beans in soy sauce or olive oil until tender. Add cooked rice and mix until heated through.
  4. Serve grilled chicken alongside veggie rice and roasted vegetables.
