- 1 chicken breast
- 1 tsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper, to taste
- 1 cup cooked rice (brown or white)
- 1 cup corn kernels
- 1 cup green beans, chopped
- 1 cup broccoli florets
- 1 cup cauliflower florets
Instructions
- Preheat your oven to 400°F (200°C). Toss broccoli and cauliflower in olive oil, salt, pepper, and garlic powder, then roast on a baking sheet for 20-25 minutes.
- Season sliced chicken breast with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear for about 5-6 minutes per side until fully cooked.
- In a skillet over medium heat, sauté corn and green beans in soy sauce or olive oil until tender. Add cooked rice and mix until heated through.
- Serve grilled chicken alongside veggie rice and roasted vegetables.
