  • 2 medium sweet potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • 1 ripe avocado
  • Juice of 1/2 lime
  • 1 cup cherry tomatoes, halved
  • 1/2 avocado, diced
  • 1/4 small red onion, thinly sliced
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss sweet potato wedges with olive oil, smoked paprika, and salt; spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper; grill over medium heat for about 6-7 minutes per side until cooked through.
  4. Mash avocado with lime juice, salt, and pepper to make guacamole.
  5. Mix cherry tomatoes with diced avocado and red onion in a bowl; add olive oil, salt, and pepper.
  6. Assemble bowls with sweet potato fries, sliced chicken, guacamole, and tomato-avocado salad.
