Ingredients
- 1 large chicken breast
- 2 medium sweet potatoes, cut into wedges
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 1 ripe avocado
- Juice of 1/2 lime
- 1 cup cherry tomatoes, halved
- 1/2 avocado, diced
- 1/4 small red onion, thinly sliced
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat your oven to 200C (400F).
- Toss sweet potato wedges with olive oil, smoked paprika, and salt; spread on a baking sheet and bake for 20-25 minutes until crispy.
- Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper; grill over medium heat for about 6-7 minutes per side until cooked through.
- Mash avocado with lime juice, salt, and pepper to make guacamole.
- Mix cherry tomatoes with diced avocado and red onion in a bowl; add olive oil, salt, and pepper.
- Assemble bowls with sweet potato fries, sliced chicken, guacamole, and tomato-avocado salad.
