Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tsp dried oregano
- Juice of lemon
- Salt & pepper to taste
- 1 small head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- Cucumber, sliced
- Red onion, thinly sliced
- Cup feta cheese, cubed
- Fresh dill
- Cup Greek yogurt
- Cucumber, grated & squeezed dry
- 1 garlic clove, minced
- 1 tbsp fresh dill, chopped
- Juice of lemon
- Salt & pepper to taste
Instructions
- Marinate chicken in olive oil, minced garlic, oregano, lemon juice, salt, and pepper for about 10 minutes.
- Grill or pan-sear the chicken on medium-high heat for 5-7 minutes on each side until cooked through and golden brown.
- Prepare tzatziki by mixing Greek yogurt, grated cucumber (squeezed dry), minced garlic, fresh dill, lemon juice, salt, and pepper until smooth.
- In bowls, layer chopped romaine lettuce and top with halved cherry tomatoes, cucumber slices, red onion, cubed feta cheese, sliced chicken, and a generous spoonful of tzatziki.
