  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of lemon
  • Salt & pepper to taste
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • Cup feta cheese, cubed
  • Fresh dill
  • Cup Greek yogurt
  • Cucumber, grated & squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Juice of lemon
  • Salt & pepper to taste

Instructions

  1. Marinate chicken in olive oil, minced garlic, oregano, lemon juice, salt, and pepper for about 10 minutes.
  2. Grill or pan-sear the chicken on medium-high heat for 5-7 minutes on each side until cooked through and golden brown.
  3. Prepare tzatziki by mixing Greek yogurt, grated cucumber (squeezed dry), minced garlic, fresh dill, lemon juice, salt, and pepper until smooth.
  4. In bowls, layer chopped romaine lettuce and top with halved cherry tomatoes, cucumber slices, red onion, cubed feta cheese, sliced chicken, and a generous spoonful of tzatziki.
