Ingredients
- 1 (8 oz) center-cut beef filet
- 1 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 cup finely chopped mushrooms (cremini or button)
- 1 tbsp butter
- 2 cloves garlic (minced)
- 1 tbsp fresh thyme leaves
- 3 slices turkey
- 1 sheet puff pastry
- 1 egg yolk (for egg wash)
- Salt and pepper to taste
Instructions
- Sear the seasoned beef filet in olive oil until browned on both sides. Let it rest and brush with Dijon mustard.
- In the same skillet, sauté garlic and thyme in butter, then add finely chopped mushrooms until moisture evaporates. Allow cooling.
- Lay turkey slices on plastic wrap, spread cooled mushroom mixture over them, place the seared beef on top, and roll into a log shape. Chill for 15 minutes.
- Preheat oven to 400°F (200°C). Roll out puff pastry, wrap around the beef log, seal edges with egg wash, and brush the top with remaining egg wash.
- Bake for 15–20 minutes until golden brown. Let rest before slicing.
