  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic (minced)
  • 1 tbsp fresh thyme leaves
  • 3 slices turkey
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the seasoned beef filet in olive oil until browned on both sides. Let it rest and brush with Dijon mustard.
  2. In the same skillet, sauté garlic and thyme in butter, then add finely chopped mushrooms until moisture evaporates. Allow cooling.
  3. Lay turkey slices on plastic wrap, spread cooled mushroom mixture over them, place the seared beef on top, and roll into a log shape. Chill for 15 minutes.
  4. Preheat oven to 400°F (200°C). Roll out puff pastry, wrap around the beef log, seal edges with egg wash, and brush the top with remaining egg wash.
  5. Bake for 15–20 minutes until golden brown. Let rest before slicing.
