- 6 oz cream cheese, cold
- 3 tbsp granulated white sugar
- 1/2 tsp vanilla

- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 2 egg yolks, at room temperature
- 1 tsp vanilla
- 1/3 cup unsulphured molasses
Instructions
- Prepare the cheesecake filling by blending cold cream cheese, granulated sugar, and vanilla until smooth. Chill until ready for use.
- In another bowl, mix flour, spices, salt, and baking soda. In a separate bowl, beat softened butter and brown sugar until fluffy. Add egg yolks and vanilla, then gradually mix in dry ingredients until combined.
- Preheat your oven to 350°F (175°C). Scoop portions of dough, flatten them in your palm, place a teaspoon of cheesecake filling in the center, and fold the dough around it to seal.
- Roll filled cookies in a mixture of granulated sugar and spices before placing them on a lined baking sheet.
- Bake for 11 minutes or until edges are firm but centers remain soft. Cool before serving.
