  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground ginger
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 1 tsp vanilla
  • 1/3 cup unsulphured molasses

Instructions

  1. Prepare the cheesecake filling by blending cold cream cheese, granulated sugar, and vanilla until smooth. Chill until ready for use.
  2. In another bowl, mix flour, spices, salt, and baking soda. In a separate bowl, beat softened butter and brown sugar until fluffy. Add egg yolks and vanilla, then gradually mix in dry ingredients until combined.
  3. Preheat your oven to 350°F (175°C). Scoop portions of dough, flatten them in your palm, place a teaspoon of cheesecake filling in the center, and fold the dough around it to seal.
  4. Roll filled cookies in a mixture of granulated sugar and spices before placing them on a lined baking sheet.
