Ingredients
- 4 green or slightly yellow plantains
- 4 cloves garlic, minced
- 2–3 tbsp olive oil or butter
- 1 lb medium shrimp, peeled and deveined
- Salt and pepper, to taste
- Optional: lime wedges and sautéed vegetables for serving
Instructions
- Prepare Plantains: Peel and cut plantains into 1–2 inch pieces. Boil in salted water until tender (10–15 minutes). Drain.
- Mash Mofongo: In a mortar and pestle or pilón, combine boiled plantains with minced garlic and olive oil. Season with salt and pepper. Mash until smooth.
- Cook Garlic Shrimp: Heat butter or olive oil in a skillet over medium heat. Sauté garlic until fragrant, then add shrimp. Cook until pink and opaque (3–4 minutes per side).
- Assemble Dish: Mold mofongo onto plates, top with cooked garlic shrimp, and drizzle any pan juices over the top.
- Serve: Garnish with lime wedges and enjoy!
