- 1 lb boneless, skinless chicken breasts
- 12 oz penne pasta
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 ½ cups heavy cream
- ½ cup chicken broth
- ½ cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the penne pasta according to package directions until al dente, then drain and set aside.
- Season chicken with Cajun seasoning, salt, and pepper. In a large skillet, heat olive oil over medium-high heat and cook the chicken until golden brown (6–8 minutes). Remove from skillet.
- In the same skillet, melt butter over medium heat. Sauté minced garlic for 1–2 minutes until fragrant.
- Stir in heavy cream and chicken broth; bring to a gentle simmer.
- Gradually add mozzarella, cheddar, and Parmesan cheeses until melted and smooth.
- Return chicken to the skillet and toss with sauce; add cooked penne pasta and mix well.
- Serve garnished with fresh parsley.
