  • 1 cup broccoli florets
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper

  • 1 cup milk
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 tsp paprika
  • Salt
  • Black pepper

Instructions

  1. Boil cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. Heat olive oil in a skillet over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for 4-5 minutes until tender.
  3. In another skillet, melt butter with olive oil over medium heat. Add minced garlic and sauté for about 30 seconds. Add shrimp, paprika, salt, and pepper; cook for 2-3 minutes per side until pink.
  4. Assemble by spooning mashed potatoes on one side of the plate and arranging shrimp and veggies on the other.
