Ingredients
- 3 medium potatoes
- 10–12 medium shrimp
- 1 cup broccoli florets
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 tbsp butter
- 1 cup milk
- 1 tbsp olive oil
- 2 cloves garlic
- 1 tsp paprika
- Salt
- Black pepper
Instructions
- Boil cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
- Heat olive oil in a skillet over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for 4-5 minutes until tender.
- In another skillet, melt butter with olive oil over medium heat. Add minced garlic and sauté for about 30 seconds. Add shrimp, paprika, salt, and pepper; cook for 2-3 minutes per side until pink.
- Assemble by spooning mashed potatoes on one side of the plate and arranging shrimp and veggies on the other.
