- 2 hard-boiled eggs, halved
- 1 cup cucumber slices
- 1 cup cherry tomatoes, halved
- 1 tablespoon chopped fresh chives
- Salt and freshly ground black pepper
- Optional: Drizzle of olive oil or lemon juice
Instructions
- Boil the eggs: Place in boiling water for 9-10 minutes. Cool in an ice bath before peeling and halving.
- Assemble the bowl: Arrange cucumber slices on one side of a shallow bowl, followed by halved cherry tomatoes next to them, and place the halved eggs around the veggies.
- Finish it off: Sprinkle chives over the top, season with salt and pepper, and optionally drizzle with olive oil or lemon juice.
