Ingredients
- 1 stick unsalted butter, room temperature
- 1 cup granulated sugar
- 1 tablespoon fresh lemon zest
- Dash of salt
- 4 large eggs
- 1 cup heavy whipping cream
- 1/2 cup freshly squeezed lemon juice (about 4 lemons)
- 1/3 cup powdered sugar
- 1/2 teaspoon pure vanilla extract
Instructions
- Zest and juice the lemons; set aside.
- In a mixing bowl, cream together butter, sugar, salt, and zest until combined.
- Add eggs one at a time while mixing well after each addition; mix in lemon juice.
- Cook the mixture over low heat in a saucepan until thickened (8–10 minutes). Cool at room temperature.
- Whip egg whites until soft peaks form; gradually add sugar and mix until stiff peaks develop.
- Whip heavy cream until stiff peaks form; fold into lemon mixture gently.
- Chill for at least one hour before serving.
