Instructions
- Prepare the tart dough by mixing flour, powdered sugar, and salt in a food processor until combined.
- Add cold cubed butter and blend until pea-sized pieces form.
- Mix in the egg and vanilla extract until the dough comes together; avoid overmixing.
- Chill the dough wrapped in plastic wrap for at least one hour.
- Roll out the chilled dough into a circle on a floured surface and place it into a tart pan. Trim edges and poke holes in the base; freeze for 20 minutes.
- Preheat oven to 350°F (180°C) and bake crust for 15-20 minutes until light golden brown; let cool.
- For the filling, whisk together lemon juice, zest, granulated sugar, unsalted butter, salt, eggs, and egg yolks until smooth.
- Pour filling into the cooled crust and bake for an additional 20-25 minutes until set but slightly jiggly in the center.
