- 2 cups apple cider
- 3 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 8 ounces unsalted butter
- 2 1/4 cups sugar
- 3 large eggs
- 1 cup whole milk
- 2 tsp vanilla
- 2 1/2 tsp ground cinnamon
- 1/2 tsp ground clove
- 1/4 ground nutmeg
- 1 1/2 tsp allspice
- 2 Honey Crisp apples, peeled, cored and pureed
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, salt, and spices.
- In another bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk and vanilla.
- Gradually combine dry ingredients with the wet mixture until just combined. Fold in pureed apples gently.
- Divide batter between prepared pans and bake for approximately 25 minutes or until a toothpick comes out clean.
- Let cool before frosting with cream cheese frosting made by beating cream cheese and butter together with powdered sugar until smooth.
