  • Total Time: 50 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 1 pound ground beef
  • 2 large sweet potatoes
  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 1/4 cup breadcrumbs
  • Olive oil
  • 1 medium onion, grated
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried sage
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup chicken stock

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, smoked paprika, dried sage, egg, Worcestershire sauce, salt, and pepper. Form into 16 golf-ball-sized meatballs.
  2. Heat olive oil in a skillet over medium-high heat. Brown meatballs on all sides for about 6 minutes; set aside.
  3. Boil peeled and cubed sweet potatoes in salted water until fork-tender (12-15 minutes). Drain and set aside.
  4. In the same skillet, deglaze with apple cider vinegar, then add maple syrup and chicken stock. Return meatballs to the skillet and simmer until cooked through (about 8-10 minutes).
  5. Mash sweet potatoes with butter, heavy cream, cinnamon, nutmeg, and salt until smooth.
  6. Serve meatballs over sweet potato mash drizzled with sauce.
