Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter (softened to room temperature)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon Vanilla Extract (Alcohol-Free)
- 1/3 cup eggnog
- 2/3 cup unsalted butter
- 3–4 cups powdered sugar
- 1/4 teaspoon nutmeg
- 1/2 teaspoon vanilla extract (alcohol-free)
- 1/4 teaspoon salt
- 3–5 tablespoons eggnog
- 1–2 tablespoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In one bowl, whisk together flour, nutmeg, cinnamon, baking soda, and salt.
- In another bowl, cream softened butter with granulated and brown sugars until fluffy. Add egg yolks and mix well; then stir in vanilla extract and eggnog.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Drop spoonfuls of dough onto the prepared baking sheet and bake for 10 minutes or until edges are lightly golden. Cool on wire racks.
- For frosting, beat softened butter with powdered sugar, nutmeg, vanilla extract, salt, and enough eggnog to reach desired consistency. Frost cooled cookies.
