Instructions
- In a mixing bowl, combine crushed ladyfingers, mascarpone cheese, powdered sugar, espresso powder, and vanilla. Mix until smooth.
- Roll tablespoon-sized portions of the mixture into balls and chill in the refrigerator for about 30 minutes.
- Melt chocolate chips in a microwave-safe bowl using short bursts of heat until smooth.
- Dip each chilled truffle in melted chocolate or roll in cocoa powder based on your preference.
- Dust with extra cocoa powder and chill for an additional 15 minutes to set.
