- 2 tbsp tomato paste
- ½ cup beef broth
- 3 large potatoes, peeled and chopped
- ¼ cup milk (or plant-based alternative)
- 2 tbsp butter (or vegan butter)
- Shredded cheddar cheese (for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Boil chopped potatoes until fork-tender; drain and mash with milk, butter, salt, and pepper.
- Cook ground beef in a skillet until browned; add onion and garlic until translucent.
- Stir in veggies, tomato paste, and broth; simmer until thickened.
- Spoon meat filling into greased muffin tins; top with mashed potatoes.
- Bake for 10–15 minutes until golden brown.
