  • 1 lb lamb, thinly sliced
  • 2 tablespoons whole cumin seeds
  • 2 teaspoons sichuan peppercorns
  • 1 teaspoon whole coriander seeds
  • 1 tablespoon apple vinegar (or dry apple juice)
  • 1 teaspoon salt
  • 1 teaspoon peanut oil (or vegetable oil)
  • 2 teaspoons cornstarch
  • 1/2 cup homemade chili oil (and more to taste)
  • 3 tablespoons chinkiang vinegar
  • 4 teaspoons light soy sauce
  • 4 teaspoons dark soy sauce
  • 8 cloves garlic, minced
  • 2 inches ginger, minced
  • 1 red onion, thinly sliced
  • 1 hot green chili, sliced
  • 1/2 bunch cilantro, chopped

Instructions

  1. Prepare your homemade noodles or set water to boil if using store-bought.
  2. Marinate the lamb in cumin seeds, sichuan peppercorns, vinegar, salt, oil, and cornstarch for at least 15 minutes.
  3. In a hot wok or frying pan, stir-fry minced garlic, ginger, and onions until fragrant.
  4. Add marinated lamb and cook quickly over high heat until just done.
  5. Toss in cooked noodles with chili oil and soy sauces; mix well.
  6. Serve hot garnished with fresh cilantro.
