- 4 boneless, skinless chicken breasts
- 1/2 cup flour
- 2 large eggs
- 1 tablespoon Dijon mustard
- 2 cups crushed pretzels
- 2 tablespoons olive oil
- 1 cup sharp cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Pound chicken breasts to even thickness and season with salt and pepper.
- Set up three dredging stations: one with flour, one with beaten eggs mixed with Dijon mustard, and one with crushed pretzels seasoned with garlic powder and smoked paprika.
- Dredge each chicken breast in flour, dip into the egg mixture, then coat thoroughly in the pretzel mixture.
- Arrange on a lined baking sheet and brush lightly with olive oil. Bake for 20-25 minutes until golden brown.
- While baking, prepare the cheddar mustard sauce by making a roux with butter and flour. Gradually whisk in milk until thickened, then stir in mustards and shredded cheese until melted.
- Serve the crispy chicken topped with sauce and garnish as desired.
