  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar (for sauce)
  • 1/2 cup unsalted butter (for sauce)
  • Thinly sliced orange peel (to taste)
  • 3/4 cup fresh orange juice

Instructions

  1. In a mixing bowl, combine flour, granulated sugar, and salt. Add eggs and whisk until blended. Gradually stir in milk and water until smooth, then mix in vanilla extract and melted butter. Let batter rest for about 30 minutes.
  2. Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet, swirling to cover evenly. Cook until lightly golden, about 1-2 minutes per side. Transfer cooked crepes to a plate.
  3. For the sauce, melt castor sugar in a saucepan over medium heat until caramelized (do not stir). Add unsalted butter and orange peel, followed by fresh orange juice. Stir until heated through.
  4. Fold each crepe into quarters and place them in the warm orange sauce briefly before serving.
