- 1 lb boneless skinless chicken breasts
- 12 oz rotini pasta
- 6 oz Velveeta cheese
- 1 cup heavy cream
- 1 cup whole milk
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
Instructions
- 1. Cook rotini in a large pot of salted boiling water until al dente (8-10 minutes). Reserve ½ cup pasta water, drain, and set aside.
- 2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken strips seasoned with Cajun seasoning and garlic powder for 7-9 minutes until golden.
- 3. In the same skillet, melt butter, sauté minced garlic for 1 minute, then add heavy cream and milk. Simmer gently.
- 4. Stir in Velveeta until melted; add mozzarella until smooth. Adjust thickness with reserved pasta water if needed.
- 5. Toss cooked rotini in the cheese sauce and let simmer for about 12 minutes.
- 6. Serve pasta topped with Cajun chicken strips.
