Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1.5 cups chicken broth
- 2 cups baby spinach
- Salt and black pepper to taste
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In a skillet over medium heat, cook the chopped turkey bacon until crispy. Drain on paper towels.
- In the slow cooker, combine cooked bacon, chicken, onion, and garlic.
- In a mixing bowl, blend cream cheese, sour cream, chicken broth, salt, and spices until smooth; pour over chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Stir in fresh spinach about 30 minutes before serving.
- Serve over cooked pasta or rice.
