Instructions
- Cook the udon noodles according to package instructions (3-5 minutes). Drain and set aside.
- In a saucepan over medium heat, combine vegetable broth and coconut milk. Stir in miso paste until dissolved and smooth.
- Add minced garlic to the sauce, cooking for one minute until fragrant.
- Toss cooked udon noodles into the sauce until well-coated.
- Adjust seasoning if necessary, then serve hot garnished with sliced green onions.
