- 3 tbsp mayonnaise
- ½ cup Mexican crema (or sour cream)
- ½ cup Cotija cheese (crumbled, or feta as a substitute)
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp chili powder (plus extra for topping)
- Salt, to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat butter in a skillet over medium heat until bubbly.
- Add corn kernels and sauté until lightly charred, about 5–7 minutes.
- In a mixing bowl, combine mayonnaise, crema, lime juice, chili powder, and salt.
- Once the corn is warm, mix it into the creamy mixture until well-coated.
- Serve in individual cups and sprinkle with crumbled cheese and chili powder.
- Garnish with cilantro and serve with lime wedges.
