Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz fettuccine or spaghetti
- 2 cloves garlic
- 1/2 small onion
- 1/4 cup heavy cream
- 1/4 cup cream cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium-high heat. Add sliced chicken, seasoning with salt and pepper. Cook until golden brown and cooked through (5-7 minutes). Remove chicken and set aside.
- In the same skillet, sauté minced garlic and diced onion until fragrant (2-3 minutes). Lower heat and add heavy cream, cream cheese, Parmesan cheese, and reserved pasta water. Stir until well combined; simmer until slightly thickened.
- Return chicken to the skillet along with lemon zest. Toss in the cooked pasta until well coated with sauce.
- Adjust seasoning as needed and serve hot.
