- 1 pound boneless, skinless chicken breasts, cubed
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 cup heavy cream
- 8 oz penne pasta or any short pasta of choice
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add cubed chicken seasoned with Cajun seasoning and smoked paprika. Cook until golden brown.
- Stir in diced onion, red bell pepper, green bell pepper, and minced garlic; sauté until soft.
- Pour in chicken broth and diced tomatoes; bring to a simmer.
- Add heavy cream and penne pasta; cook until pasta is al dente.
- Season with salt and pepper to taste. Garnish with grated Parmesan cheese, sliced green onions, and fresh parsley before serving.
