  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 4 cloves garlic (finely chopped & minced)
  • 1 onion (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 2 tbsp tomato paste
  • Olive oil (for frying)
  • Italian herb blend

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, Italian herbs, salt, and pepper. Mix well and form into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; remove and set aside.
  3. In the same skillet, sauté sliced onion and bell peppers until softened. Add minced garlic and cook briefly.
  4. Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; let simmer for a few minutes.
  5. Return meatballs to the skillet and cover; simmer for about 10-12 minutes until cooked through.
  6. Serve topped with fresh parsley.
