- 500g minced chicken
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 4 cloves garlic (finely chopped & minced)
- 1 onion (thinly sliced)
- 1 red bell pepper (thinly sliced)
- 1 yellow bell pepper (thinly sliced)
- 1 cup chicken stock
- ½ cup heavy cream
- 2 tbsp tomato paste
- Olive oil (for frying)
- Italian herb blend
Instructions
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, Italian herbs, salt, and pepper. Mix well and form into small meatballs.
- Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; remove and set aside.
- In the same skillet, sauté sliced onion and bell peppers until softened. Add minced garlic and cook briefly.
- Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; let simmer for a few minutes.
- Return meatballs to the skillet and cover; simmer for about 10-12 minutes until cooked through.
- Serve topped with fresh parsley.
