Ingredients
- 1 tablespoon vegetable oil
- 3 tablespoons unsalted butter
- 1 large yellow onion, chopped
- 2 medium carrots, diced
- 2 teaspoons minced garlic
- 3 cups chicken broth
- 1 cup whole milk
- 2 cans Great Northern beans, rinsed and drained
Instructions
- In a large pot over medium-high heat, add vegetable oil. Once hot, sauté kielbasa slices until browned (about 7-9 minutes). Remove and set aside.
- In the same pot, melt butter and add onion, carrots, garlic, salt, and pepper. Cook until vegetables soften (10-12 minutes).
- Sprinkle flour over the veggies; stir well for one minute.
- Slowly add chicken broth and whole milk while stirring; bring to a simmer.
- Return kielbasa to the pot along with rinsed beans.
- Reduce heat to medium-low and simmer until thickened (15-20 minutes).
