  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar (for filling)
  • 1 large egg (for filling)
  • ½ teaspoon vanilla extract (for filling)
  • ¼ cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. In a mixing bowl, mash ripe bananas until smooth. Whisk in melted butter, brown sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, mix together flour, baking soda, salt, and ground cinnamon.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. In a separate bowl, beat together cream cheese, granulated sugar, egg, and vanilla extract until smooth.
  6. Pour half of the banana batter into the loaf pan and sprinkle with half of the cinnamon-sugar mixture. Spread the cream cheese filling over this layer, then top with remaining batter and sprinkle with remaining cinnamon-sugar.
  7. Bake for 50–60 minutes or until a toothpick comes out clean (a bit of cream cheese is fine).
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
