Ingredients
Scale
- 2 large ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for filling)
- 1 large egg (for filling)
- ½ teaspoon vanilla extract (for filling)
- ¼ cup granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- In a mixing bowl, mash ripe bananas until smooth. Whisk in melted butter, brown sugar, eggs, and vanilla extract until well combined.
- In another bowl, mix together flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- In a separate bowl, beat together cream cheese, granulated sugar, egg, and vanilla extract until smooth.
- Pour half of the banana batter into the loaf pan and sprinkle with half of the cinnamon-sugar mixture. Spread the cream cheese filling over this layer, then top with remaining batter and sprinkle with remaining cinnamon-sugar.
- Bake for 50–60 minutes or until a toothpick comes out clean (a bit of cream cheese is fine).
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
