  • 1 tablespoon vegetable oil
  • 1 small yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 1 teaspoon garlic, minced
  • 2 pounds ground beef
  • 2 large eggs, beaten
  • 1 cup canned pinto beans, drained and rinsed
  • ½ cup plain breadcrumbs
  • 1 cup BBQ sauce, divided
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne
  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan with nonstick spray.
  2. In a skillet, sauté diced onion and bell pepper in vegetable oil until softened; add minced garlic and cook for another minute.
  3. In a large bowl, combine cooled vegetables with ground beef, eggs, pinto beans, breadcrumbs, ½ cup BBQ sauce, Worcestershire sauce, chili powder, salt, cayenne pepper, and black pepper. Mix gently.
  4. Shape half of the meat mixture into a loaf in the prepared pan; create a trench down the center and fill it with shredded cheese. Add the remaining meat mixture on top to seal.
  5. Brush ¼ cup of BBQ sauce over the top and bake for 40 minutes; brush with remaining BBQ sauce and bake for an additional 25-30 minutes until cooked through.
  6. Allow to rest for 5 minutes before slicing.
