Instructions
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Blend cottage cheese in a food processor until smooth.
- In a mixing bowl, whisk eggs and mix in blended cottage cheese and olive oil (if using).
- Stir in oat flour, baking powder, salt, and seasonings.
- Divide the dough into 2-3 portions and shape each into thin oval flatbreads on floured parchment paper.
- Place on the baking sheet and bake for 15-18 minutes until golden brown.
