- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Blend the instant coffee into a fine powder using a food processor.
- In a medium bowl, sift together flour, blended coffee, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, combine melted butter with brown sugar, granulated sugar, vanilla extract, and eggs until well mixed.
- Gradually incorporate dry ingredients into the wet mixture using a rubber spatula; fold in chocolate chips gently.
- Preheat your oven to 350°F and line baking sheets with parchment paper.
- Scoop dough onto prepared sheets (six cookies per sheet) and optionally top with extra chocolate chips.
- Bake for 12-14 minutes until edges are golden and centers are slightly underbaked; let cool on pans for five minutes before transferring to racks.
