Ingredients
- 2 lbs beef chuck, cut into large chunks
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- 1 can (13.5 oz) coconut milk
- 1 cup beef broth
Instructions
- In a large pot over medium-high heat, heat vegetable oil. Sear beef chunks until browned on all sides. Remove and set aside.
- In the same pot, sauté chopped onion, minced garlic, and grated ginger until softened.
- Stir in curry powder, turmeric, cinnamon, cayenne pepper (if using), salt, and black pepper; cook until fragrant.
- Return beef to the pot along with coconut milk and beef broth; stir to combine.
- Bring to a gentle boil, then reduce heat to low, cover, and simmer for 2-3 hours until beef is tender.
- Serve over fluffy rice or your favorite sides.
