Instructions
- Slice the thick-cut bread into uniform pieces about 1-inch thick.
- In a shallow dish, mix shredded coconut, flour, cinnamon, and salt.
- In a bowl, whisk together eggs, milk, sugar, and vanilla until smooth.
- Heat butter in a skillet over medium heat.
- Dip each slice of bread into the egg mixture, allowing excess to drip off.
- Coat both sides in the coconut mixture and place in the skillet.
- Cook each slice for about 3-4 minutes per side until golden brown and crispy.
- Serve warm with maple syrup or your choice of toppings.
