- 5 Bok Choy Leaves
- 2 Green Onions
- 1 Tablespoon Oil
- 1 Tablespoon Ginger + Garlic (combined)
- 1 Star Anise
- 1 Bay Leaf
- 1 Cinnamon Stick
- 5 cups Broth (or Stock)
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Rice Vinegar
- Juice of one Lime
Instructions
- Wash and slice bok choy leaves into bite-sized pieces.
- Slice green onions, keeping the white bulbs separate from the green stalks.
- In a large pan over medium heat, add oil and sauté the white onion bulbs until soft.
- Stir in ginger and garlic, then return to heat.
- Add bok choy and stir-fry briefly until slightly wilted.
- Incorporate star anise, bay leaf, and cinnamon stick.
- Pour in broth or stock and stir well.
- Season with soy sauce and rice vinegar; bring to a boil.
- Simmer for 8–10 minutes until flavors meld.
- Squeeze lime juice into the soup, remove whole spices, and serve garnished with green stalks.
