  • 1 Star Anise
  • 1 Bay Leaf
  • 1 Cinnamon Stick
  • 5 cups Broth (or Stock)
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Rice Vinegar
  • Juice of one Lime

Instructions

  1. Wash and slice bok choy leaves into bite-sized pieces.
  2. Slice green onions, keeping the white bulbs separate from the green stalks.
  3. In a large pan over medium heat, add oil and sauté the white onion bulbs until soft.
  4. Stir in ginger and garlic, then return to heat.
  5. Add bok choy and stir-fry briefly until slightly wilted.
  6. Incorporate star anise, bay leaf, and cinnamon stick.
  7. Pour in broth or stock and stir well.
  8. Season with soy sauce and rice vinegar; bring to a boil.
  9. Simmer for 8–10 minutes until flavors meld.
  10. Squeeze lime juice into the soup, remove whole spices, and serve garnished with green stalks.
