Ingredients
- 3 overripe mashed bananas
- 4 tablespoons melted vegan butter
- ¾ cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 teaspoon vanilla extract
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 ½ cups all-purpose flour (regular or gluten-free)
- 1 cup old fashioned rolled oats
- 4 tablespoons melted vegan butter (for the cinnamon swirl)
- ⅓ cup light brown sugar
- 2 tablespoons cinnamon (for the cinnamon swirl)
- ¾ cup powdered sugar (for frosting)
- 2 tablespoons melted vegan butter (for frosting)
- 2 oz softened vegan cream cheese
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mash bananas and mix with melted vegan butter, maple syrup, almond milk, and vanilla extract.
- In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and oats; add to the wet mixture until just combined.
- Pour half the batter into the loaf pan. Mix melted butter with brown sugar and cinnamon; spread half over the batter.
- Add remaining batter on top followed by the rest of the swirl mixture.
- Bake for 50–60 minutes until a toothpick comes out clean.
- Cool completely before frosting with a mixture of powdered sugar, melted vegan butter, and softened cream cheese.
