Ingredients
- ½ cup dried cranberries
- 4 ounces bittersweet chocolate
- 2 ounces semi-sweet chocolate
- ⅓ cup heavy cream
- 4 ounces Biscoff cookies (or similar)
- ½ cup pistachios (toasted)
- ½ cup confectioners' sugar
Instructions
- In a small bowl, combine dried cranberries and fruit juice; microwave for 30 seconds and let cool.
- Melt bittersweet and semi-sweet chocolate with cream in a medium bowl using the microwave at 50% power until smooth.
- Combine crushed cookies and salt into the melted chocolate mixture, then add pistachios and cranberry mixture; stir until well mixed.
- Shape the mixture into two logs using parchment paper, refrigerate for at least three hours until firm.
- Dust logs with confectioners' sugar, slice into rounds, and serve.
