  • 1¼ cups granulated sugar plus ¼ cup powdered sugar
  • ¾ cup canola oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • 2 large eggs, room temperature
  • ¼ cup red jimmies sprinkles
  • 1 cup dark chocolate
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, salt, baking soda, and cream of tartar.
  3. In another bowl, beat butter with granulated and powdered sugars until fluffy. Mix in canola oil, vanilla, and peppermint extracts.
  4. Add eggs one at a time until incorporated.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Drop rounded tablespoons onto prepared sheets, spacing them two inches apart.
  7. Bake for about 10 minutes or until edges are lightly golden.
  8. For ganache, heat dark chocolate and heavy cream over low heat until smooth.
  9. Once cooled, dip cookies into ganache or drizzle on top; sprinkle with red jimmies while still wet.
