- 1 cup unsalted butter

- 1 cup firmly packed brown sugar
- 3/4 cup granulated sugar
- 1 large egg (room temperature)
- 1 large egg yolk (room temperature)
- 2 1/2 teaspoons vanilla extract
Instructions
- Brown the butter in a heavy-bottomed saucepan until melted and caramelized.
- Allow the browned butter to cool to room temperature.
- In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
- Beat the cooled butter with both sugars until creamy.
- Mix in the egg, yolk, and vanilla until smooth.
- Gradually incorporate the dry ingredients until just combined.
- Chill the dough for at least one hour (preferably longer).
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Portion dough into balls and bake for 8 – 10 minutes until golden brown.
- Cool slightly on baking sheets before transferring to wire racks.
