- 1 1/2 cups all-purpose flour
- 1/2 cup Dutch-process cocoa powder
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar
- 1/4 cup granulated white sugar
- 2 egg yolks
- 1 1/2 tsp vanilla extract
- 5 oz chopped chocolate (for ganache)
- 1/4 cup heavy cream
- 1/4 cup cherry preserves
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and sea salt.
- In another bowl, cream softened butter with light brown and granulated sugars until fluffy. Add egg yolks one at a time and mix in vanilla extract.
- Gradually blend the dry ingredients into the wet mixture until just combined.
- Scoop dough onto the baking sheet and create an indentation in each cookie ball.
- Bake for about 10 minutes until edges are firm but centers remain soft.
- For ganache, heat heavy cream until simmering, then stir in chopped chocolate until smooth.
- Once cookies cool slightly, fill indentations with cherry preserves and drizzle ganache on top.
