- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes
- 2 cups broccoli florets
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Toss sliced sweet potatoes in olive oil, salt, and optional seasoning. Spread evenly on a baking sheet and roast for 25-30 minutes, flipping halfway.
- Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper before grilling or searing until golden brown and fully cooked (internal temp should reach 165°F/74°C). Let rest for a few minutes before slicing.
- Steam broccoli florets in a pot over boiling water for about 5-6 minutes until tender and season with salt.
- Assemble your meal prep containers by layering steamed broccoli at the bottom followed by roasted sweet potatoes and sliced chicken on top.
