  • 2 bell peppers (any color, sliced)

  • 8 oz mushrooms (sliced)
  • 6 Tablespoons vegetable oil

  • smoked paprika
  • fresh lemon juice

Instructions

  1. Season chicken strips with seasoned salt, cumin, and smoked paprika. Mix well.
  2. In a large bowl, combine sliced vegetables.
  3. Heat 1.5 tablespoons of oil in a skillet over high heat. Sauté 1/3 of the vegetables until seared and crisp-tender; remove and repeat for remaining batches.
  4. In the same skillet, add another 1.5 tablespoons of oil and cook seasoned chicken until no longer pink.
  5. Return all vegetables to the skillet and toss together before serving.
