- 1 lb chicken breasts (sliced into thin strips)
- 2 bell peppers (any color, sliced)
- 1 large sweet onion (sliced)
- 8 oz mushrooms (sliced)
- 6 Tablespoons vegetable oil
- homemade seasoned salt
- cumin
- smoked paprika
- fresh lemon juice
Instructions
- Season chicken strips with seasoned salt, cumin, and smoked paprika. Mix well.
- In a large bowl, combine sliced vegetables.
- Heat 1.5 tablespoons of oil in a skillet over high heat. Sauté 1/3 of the vegetables until seared and crisp-tender; remove and repeat for remaining batches.
- In the same skillet, add another 1.5 tablespoons of oil and cook seasoned chicken until no longer pink.
- Return all vegetables to the skillet and toss together before serving.
