Ingredients
- 4 boneless, skinless chicken breasts
- 4 slices of chicken breast
- 4 slices of Swiss cheese
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- 2 tbsp olive oil
- 2 tbsp butter
- 1 cup milk
- 1 tsp Dijon mustard
- ½ cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Pound each chicken breast to about ¼ inch thickness. Layer with chicken slices and cheese, then roll tightly and secure with toothpicks.
- Dredge each roll in flour mixed with salt and pepper, dip in beaten eggs, and coat with breadcrumbs.
- Heat olive oil and butter in a skillet over medium heat. Sear each roll until golden brown on all sides.
- Transfer to a baking dish and bake uncovered for 20–25 minutes until the internal temperature reaches 165°F (74°C).
- For the sauce, melt butter in a saucepan, whisk in flour, then gradually add milk. Stir in Dijon mustard and Parmesan until thickened.
- Remove toothpicks from chicken, slice into rounds, drizzle with sauce, and serve.
