- ¼ cup fruit juice (instead of bourbon)
- ¼ cup finely chopped maraschino cherries
- ½ cup softened butter
- 4 cups powdered sugar
- 3 cups semi-sweet chocolate chips
- 2 tablespoons shortening or coconut oil
- 30 candied cherry halves
Instructions
- Combine finely chopped pecans and fruit juice in a mixing bowl; let sit for at least 1 hour.
- In another bowl, beat softened butter with powdered sugar until smooth.
- Add the pecan mixture and chopped cherries; mix well.
- Shape into 1-inch balls and refrigerate for at least 1 hour.
- Melt chocolate chips with shortening or coconut oil over low heat.
- Dip each ball in melted chocolate, place on parchment paper, and top with a candied cherry half.
- Chill until set before serving.
