  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon kosher salt
  • ½ cup baking soda
  • 1 egg, beaten (for egg wash)
  • 2 cups shredded cheese (cheddar, mozzarella, or your choice)
  • Coarse sea salt (for sprinkling)

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a large bowl; let it sit for 5 minutes until frothy.
  2. In another bowl, whisk together flour and kosher salt.
  3. Gradually add the flour mixture to the yeast mixture and stir until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in an oiled bowl, cover with a cloth, and let it rise in a warm place for approximately 30 minutes or until doubled in size.
  6. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  7. Boil 10 cups of water in a large pot and carefully add baking soda.
  8. Punch down the dough, divide it into pieces, roll each into a rope, and shape into pretzels.
  9. Boil each pretzel in the baking soda solution for about 30 seconds using a slotted spoon before placing them on the baking sheet.
  10. Make a small cut in each pretzel and fill generously with shredded cheese.
  11. Brush each pretzel with beaten egg and sprinkle coarse sea salt on top.
