- 1 ½ cups warm water (110°F to 115°F)
- 2 teaspoons active dry yeast
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon kosher salt
- ½ cup baking soda
- 1 egg, beaten (for egg wash)
- 2 cups shredded cheese (cheddar, mozzarella, or your choice)
- Coarse sea salt (for sprinkling)
Instructions
- Activate the yeast by combining warm water, sugar, and yeast in a large bowl; let it sit for 5 minutes until frothy.
- In another bowl, whisk together flour and kosher salt.
- Gradually add the flour mixture to the yeast mixture and stir until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover with a cloth, and let it rise in a warm place for approximately 30 minutes or until doubled in size.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil 10 cups of water in a large pot and carefully add baking soda.
- Punch down the dough, divide it into pieces, roll each into a rope, and shape into pretzels.
- Boil each pretzel in the baking soda solution for about 30 seconds using a slotted spoon before placing them on the baking sheet.
- Make a small cut in each pretzel and fill generously with shredded cheese.
- Brush each pretzel with beaten egg and sprinkle coarse sea salt on top.
- Bake for 15-20 minutes or until golden brown.
- Let cool slightly before serving.
