  • 8 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In one bowl, whisk together flour, baking powder, baking soda, spices, and salt. In another bowl, beat eggs and sugars until creamy. Combine both mixtures and fold in grated carrots.
  3. Spread batter in the pan and bake for 10-12 minutes or until springy. Roll the cake in a powdered-sugar-dusted towel while warm and let cool completely.
  4. For the frosting, beat together cream cheese, powdered sugar, vanilla extract, and softened butter until smooth.
  5. Unroll the cooled cake gently and spread frosting evenly before re-rolling. Chill for at least 30 minutes before slicing.
