Ingredients
- 6 large eggs
- Water for boiling
- Ice for ice bath
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- ½ tsp Cajun seasoning (more to taste)
- ½ tsp hot sauce (optional)
- 1 tsp lemon juice
- Salt and black pepper to taste
- ½ cup all-purpose flour
- 1 large egg (for dredging)
- 1 tbsp milk
- ½ cup breadcrumbs (Panko or regular)
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Vegetable oil for frying
- Chopped fresh parsley
- Extra Cajun seasoning for dusting
- Hot sauce drizzle
Instructions
- Boil the eggs in a saucepan of water for 10–12 minutes, then transfer to an ice bath.
- Peel cooled eggs, slice in half, and remove yolks.
- Mash yolks with mayonnaise, mustard, Cajun seasoning, and seasonings until smooth.
- Dredge egg whites in flour, dip in egg wash, and coat with breadcrumbs mixed with paprika and garlic powder.
- Fry coated egg whites in hot oil until golden brown for about 1–2 minutes per side.
- Fill fried whites with yolk mixture, garnish as desired, and serve immediately.
